Weeknight Red Lettuce Salad with Pickled Radishes, Scapes, and Lemon-Dill Dressing
Serves one person as a main dish, more as a side.
1/2 head of red leaf lettuce
1 bunch garlic scapes, tossed on the grill and then cooled
3 radishes, sliced and steeped in red wine vinegar for a couple hours
Dressing
2 tablespoons olive oil
1 tablespoon lemon juice
a little salt
1/2 bunch of fresh dill
