Cauliflower Salad with Radicchio + Cilantro
Here’s another take on the big giant salad. So filling, so delicious, so durable, so doable. It even stands up to an unrefrigerated lunch bag, making it ideal for a working person’s lunch.
The photo above shows a double batch. (We love this big salad so much, we tend to make it bigger than big.) A single batch makes enough for 2-3 days of lunches for one person.

The process couldn’t be simpler. Nothing to it but some chopping + stirring.
Ingredients
1 medium head cauliflower
2 small radicchio
2 bunches cilantro
3 small bell peppers
1 bunch red scallions
1/2 cup lemon juice
1/2 cup extra virgin olive oil
1/2 teaspoon sea salt
Instructions
Mix the olive oil, salt, and lemon juice in the bottom of a large bowl. Chop the cauliflower into small florets, followed by the radicchio, bell peppers, cilantro, and scallions. Toss everything well and serve with some toasted pumpkin seeds.
