Patty Pan Pork Burgers

 

Ingredients

1 pound ground pork

1 tablespoon ground flax seed

2 tablespoons Dijon mustard

1 tablespoon Sriracha

1 teaspoon sea salt

1 quart patty pan squash

aioli and radicchio leaves for serving

Process

Mix the first 5 ingredients with your hands or a sturdy wooden spoon. Form into patties and grill the burgers for a few minutes per side.

While the burgers are grilling, slice the patty pan squash into planks (along the equator, not the prime meridian). Grill them until they yield to the prick of a knife.

Quarter the extra patty pan squash and toss with torn basil leaves and mozzarella pearls.
