About this Cut
Our heritage breed hogs are raised on pasture, which definitely affects the color and flavor. Ribs come from the side of the pig, right between the pork chops and the bacon.
Cooking Inspiration
Tender ribs are the result of long, slow cooking. Rub with your favorite spice mix and throw those babies in an InstantPot. You can also cover them with foil and roast them in the oven, or grill them over indirect heat for a couple hours at low heat til the meat is fork-tender. Then add barbecue sauce and broil for sticky, caramelized ribs. Don’t have an Instant Pot? Use a crock pot instead. Got plenty of time and a campfire? Try campfire ribs.
